French Banana Pancakes


While DH was in Europe, we went for easy dinners. One night I had a lot of bananas that needed to be eaten. So I found this recipe to use them up--and it was for pancakes, something I knew the kids would love to have for dinner.

When we moved here from Pennsylvania, some friends gave us "Washington State Bed & Breakfast cookbook" as a going-away gift. I have used it several times--mainly because I love to bake and make yummy breakfasts :)

This particular recipe is from A Quail's Roost Inn, in Chelan (the website doesn't work so it may not be open anymore). Here it is:

French Banana Pancakes Makes 8 to 10 Pancakes

1 c. flour

1/4 c. powdered sugar

1/4 t. salt

1 c. milk

2 eggs

1/4 t. vanilla

3 T. butter, melted

In a medium bowl, sift together flour, powdered sugar and salt. Add milk, eggs, vanilla, and melted butter. Beat until smooth. Heat a lightly greased 6-inch skillet. Add 3 T. batter to cover the bottom of skillet (I used a 1/4 c. measuring cup to pour the batter in the skillet). Cook until lightly browned; turn and brown other side. Remove to a wire rack. Repeat with remaining batter.


For the filling:

1/4 c. butter

1/4 c. brown sugar

1/4 t. cinnamon

1/4 t. nutmeg

1/4 c. light cream (I used whole milk and it worked fine)

5 firm bananas, halved lengthwise


To make filling, melt butter in a large skillet. Stir in brown sugar, cinnamon and nutmeg. Add cream and cook until slightly thickened. Add bananas and heat for 2-3 minutes, spooning sauce over them. Remove from heat. (**my note: do not over cook bananas--they will fall apart).


To serve: Roll a pancake around each banana half and place on serving plates. Spoon sauce over pancakes. Top with whipped cream and a dash of cinnamon. (see top photo)

My kids ate them up and asked if we could have them when dad gets back home :) Enjoy!

Yum - and I'm not a banana fan either. (Unless of course they are framing three scoops of icecream...or in a milkshake...)
